Vegan high-fibre seed and vegetable loaf with olives and doenjang
A dense, savoury vegan loaf made with wholegrain flakes, vegetables, chia, flax, pumpkin seeds, peanuts, green olives and doenjang. It is wonderfully filling, deeply umami and rich in a diverse mix of fibres, with some field notes from my first attempt and a look at what those ingredients may do to support the gut microbiome and its connection with the brain.
